Homemade Pancakes

Homemade pancakes with a side of bacon.

A pancake is a circular, flat and slightly sweet pastry item which people often cover with syrup before eating. Pancakes are most commonly eaten at breakfast, though they can be eaten anytime of the day. The origin of pancakes can be traced back to the 17th century Dutch settlers. The colonists would often put pumpkin and other spices into the batter to add extra flavor to the pancakes. Today, we sometimes add fruit or candy to enhance the flavor of our pancakes. Blueberries and chocolate chips are two examples of popular pancake ingredients.

Instructions

1. Combine the dry ingredients together in a large bowl. Sift the flour and sugar together.

2. Pour the buttermilk in a separate bowl. Add the egg, melted margarine and vanilla extract. Whisk together the wet ingredients until well-blended.

3. Stir the wet ingredients into the dry ingredients. Whisk or beat the batter until smooth and slightly bubbly.

4. Add optional ingredients--such as chocolate chips or blueberries--to the batter. Stir until the ingredients are evenly distributed throughout the batter.

5. Pour 1/4 cup batter into a hot pancake griddle. Flip the pancake when it has browned on the bottom. The pancake is done once both sides have browned.

6. Create a stack of pancakes and drizzle warm syrup over the top. Add fruit, whipped cream or other desired toppings.
