You will need between five and six pounds of cut beef bones that still have some meat. Purchase two onions, two carrots, and celery sticks. The recipe requires 10 peppercorns, four garlic cloves, and two cloves. You will additionally need one tsp. tomato puree, 8 3/4 pints of water, and a large bouquet garni.

Preparation

Quarter the onions and carrots. Chop two sticks of celery. Preheat your oven to 450 degrees. Set the bones in a roasting pan and into the oven for 30 minutes until they are browned. Add the vegetables to the pan and keep them in the oven until they are evenly browned.

Directions

Pour the contents of the roasting pan into a pot. Add the seasonings, the bouquet garni, and the garlic and tomato puree. Boil one pint of water in a separate pot and pour it into the broth pot. Add the remaining water into the broth pot. Bring it to a boil then skim off the top layer of fat and simmer it for six hours. Strain and cool the broth.
