Peel & Cut Up a Mango


Due to the pit in the center of the mango, you will need to cut the fruit to separate the flesh. Ripe mangoes can become slippery once cut open, so a cutting technique that involves both hands helps to control the fruit. Fortunately, you can cut and peel the mango at the same time with a versatile technique that avoids the pit and allows you to stabilize the mango.


Instructions


1. Rinse the mango under cool water. This will remove dirt and debris trapped on the skin.


2. Hold the mango with one hand. Place the mango on the cutting board so that it stands on its end. The stem side of the fruit will be facing down.


3. Cut one-half of the mango. Visualize the oval pit inside the mango. Begin cutting at the top of the mango down one side of the pit.


4. Repeat the cut on the other half of the mango. You will now have three pieces that consist of two halves and the center that contains the pit.


5. Cut cross sections into one-half of the mango. Do not cut through the peel when making these cuts. You will make cuts ½-inch wide lengthwise. Then make cuts ½-inch crosswise so that you end up with small mango cubes.


6. Remove the peel from the mango pieces and place them in a bowl. You can use your fingers to separate the peel from the fruit, or you may have to use a sharp knife. Repeat this process for the other mango half.


7. Lay the mango section with the pit on the cutting board. Use a small sharp knife to remove the pit; then remove the peel. Cut this section into ½-inch cubes.
