Make A Coconut Cordial

Many people use the terms "liqueur" and "cordial" interchangeably. While both are sweet and are most often served after dinner, the two drinks are different. Liqueurs are usually flavored with herbs, while cordials are made with fruit or fruit juices, such as this coconut libation.


Instructions








1. Pour 56 ounces of coconut milk into a large bowl. Add water, up to an amount equal to the coconut milk, depending on how you strong you want your cordial.


2. Add enough sugar to equal to at least half the amount of coconut milk so that a cloudy liquid is created. Mix well.


3. Place the yeast in a small bowl and mix in a few tablespoons of coconut milk. Add the yeast mixture to the large bowl and stir well.








4. Use the funnel to pour the mixture into the clean, dry soda bottle. Leave about 1 inch of space. Pull the balloon over the opening of the bottle.


5. Set the bottle in a cool, dark place and leave undisturbed for up to 7 days. Monitor the small surface bubbles created by the yeast. Note when the bubbles stop forming.


6. Set the coffee filter in a strainer over a large bowl. Slowly pour the cordial into the filter. Funnel and store the finished cordial in a glass bottle with a tight lid.


7. Serve in cordial glasses or pour into glasses with a splash of sparkling water. Refrigerate the unused portion.
