Thicken Blackberry Juice For Syrup

Store blackberry syrup in mason jars to enjoy for up to one year.

Switch up your usual pancake routine with fresh, homemade blackberry syrup. Blackberry syrup is surprisingly simple to make and your taste buds will thank you for it. You can use store-bought blackberry juice or make your own by boiling mashed berries with a bit of water and then straining it. Turn the watery juice into a thick syrup with the help of some sugar and your stove top. The syrup will keep in the fridge in an airtight container for up to two weeks. To preserve the syrup for up to a year, pour it into mason jars and seal them with a hot water bath.

Instructions

1. Combine the blackberry juice with equal parts granulated sugar in a saucepan. For each cup of juice, add 1 tbsp. of lemon juice to the solution.

2. Bring the mixture to a rolling boil, then reduce it to a simmer. Stir the syrup constantly as it cooks. Allow the mixture to simmer until it thickens, about 5 minutes.

3. Remove the saucepan from heat. Skim the foam off the top with a spoon and discard.

4. Pour the syrup into sterilized jars. Store the jars in the refrigerator or seal them with a hot water bath and store in a cool, dark place.

5. Stir the syrup before serving if it becomes too thick.
