Bake Cheesy Potato Casserole







Cheesy potato casserole is a hit at any occasion.


Cheesy potato casserole is a classic comfort food that works well as a side dish or even a whole meal. This dish is always a hit, whether served at parties, potluck events or just at the family dinner table. What's even better is that this hearty casserole dish is not only simple to make, but the preparation time is under an hour.


Instructions


1. Wash, peel and cut six medium-sized potatoes into small chunks. Place these potato chunks into a large stainless steel pot and cover with water.


2. Place the pot over high heat and bring water to a boil. Once it's at a boil, reduce the heat to medium and cover the pot. Allow the potatoes to cook for 20 minutes.


3. Drain potatoes in a colander and then return them to the pot.


4. Mash the potatoes with a potato masher, making sure not to leave any lumps in the potatoes. The mashed potatoes should be fluffy and smooth.


5. Add 8 oz. of French onion dip, 8 oz. of 4 percent cottage cheese, 3 cups of cheddar cheese and 1/2 cup of chopped onion to the mashed potatoes. Stir everything together with a wood spoon. Add salt and pepper to taste to the potatoes.


6. Grease a 1 1/2 quart baking dish with shortening. Use a pastry brush to apply an even layer of shortening.


7. Pour the mashed potatoes into the greased baking dish.








8. Mix 2 cups of corn flake crumbs with 1/4 cup of melted butter in a small bowl. Spread this mixture over the top of the potatoes.


9. Sprinkle 1 cup of shredded cheddar cheese on top of the casserole.


10. Preheat the oven to 250 F. Bake the casserole, uncovered, for 40 minutes. The casserole should be heated through and the cheese on top should be completely melted into the corn flakes, which should be browned and crispy.
