Make Thai Coconut Chicken Balls







The coconut tree grows in tropical and subtropical climates and is a staple in the diet of many cultures. Coconut is the main ingredient of many Thai dishes. Here we combine coconut milk and coconut flakes with minced chicken as main ingredients for this Thai appetizer.


Instructions


1. Process chicken breast meat, spring onion and coconut flakes in a food processor or blender until smooth.


2. Mix the minced chicken mixture with coconut milk, coriander, garlic powder, sweet chili sauce and breadcrumbs in a large bowl. Add salt and pepper if desired. Blend well.


3. Moisten hands with some water and roll the chicken mixture into bite-size balls.


4. Preheat oven to 325 F. Pour 1 cup oil in a frying pan over high heat. Fry coconut chicken balls in hot oil until golden brown on all sides. Transfer fried chicken balls to paper towels to drain.


5. Arrange fried coconut chicken balls on baking sheet, and bake for 6 minutes or until brown. Enjoy Thai coconut chicken balls while hot.
