Make Hot Sauce Like A Fast Food Mexican Place

This recipe imitates the milder hot sauces served at popular Mexican fast food places. When you make your own at home, the decisions you make about the amount of heat, the vegetables you use, and sweet or savory ingredients all contribute to the final product. Save your used sauce bottles for storing this spicy condiment and don't limit its use to burritos and tacos--add hot sauce to eggs, dash it into soups and spice up your steak.

Instructions

1. Set a medium saucepan with a heavy bottom over low heat. Add the tomatoes, garlic and onion. Cook for about 10 minutes, stirring occasionally.

2. Add the jalapenos, water, salt, cayenne pepper and vinegar. Cook for another 10 minutes, stirring occasionally.

3. Remove from heat and let the mixture cool to room temperature.

4. Place half of the mixture in a blender or food processor with a chopping blade. Blend until very smooth. Pour the sauce into a bowl and process the other half.

5. Pour sauce that you aren't using immediately into bottles or jars that have been washed and rinsed in very hot water. Cover and refrigerate. Use within two months.
