Make Eggplant Casserole

Eggplant casserole is a flavorful dish that packs a healthy dose of veggies along with plenty of protein and lots of gooey cheese. For a departure from the usual green bean casserole, easy to make eggplant casserole is a perfect substitution. It may even become a family favorite. Read on to learn make eggplant casserole.


Instructions


1. Peel and chop eggplant.


2. Saute chopped eggplant in a small amount of canola oil until tender. Set cooked eggplant aside.


3. Brown the ground beef in a skillet. When meat is almost cooked add chopped onion, bell pepper, and celery. Cook meat, onion, bell pepper and celery until ground beef is cooked through and vegetables are crisp tender.


4. Add chopped eggplant, cheese and cream of mushroom soup to the meat, onion, celery and bell pepper mixture. Cook until the cheese is melted. Add salt and pepper to taste.


5. Add one beaten egg and 1/2 cup of buttery cracker crumbs. Mix well.


6. Pour eggplant casserole mixture into a 9 by 13 casserole dish.


7. Top eggplant casserole with remaining buttery cracker crumbs.








8. Bake uncovered for 30 minutes at 325 degrees.
