Cook A Good Leg Of Pork

The pork leg is a specialty that is usually served on holidays like Thanksgiving and Christmas. It can also be a lifesaver dish anytime, and you can use it for dinner and even sandwich meat for over a week or more if refrigerated.


Instructions


1. Mix the salt, cayenne, sage and 2 tbs. of vinegar to create a rub.


2. Rub the mixture into the pork leg.


3. Pierce the pork leg in various spots using a knife tip. This ensures that the spices get deep into the pork leg, which will give it a great flavor.


4. Wrap the pork leg in a cloth and place it into a container.








5. Pour the vinegar over the pork leg then let it sit for several hours.


6. Preheat the oven to 350 degrees F.


7. Take the cloth off the pork leg and rub the butter or oil and flour over it.


8. Insert the cloves one by one into the base of the pork leg.


9. Place the pork leg on a tray and into the oven, allowing about 30 minutes to the pound.


10. Once the pork leg is cooked, take it out of the oven and let it sit for 20 minutes before serving.
