Make Apple Cole Slaw

Summer barbecues tempt the taste buds with juicy burgers, steaming baked beans and chunky potato salad, but sometimes it's nice to have a change of pace. For your next barbecue, try pairing those burgers with a side of Apple Cole Slaw. This cole slaw is filled with a delicious combination of apples and vegetables and in just half an hour you can prepare enough slaw to satisfy six hungry guests.


Instructions


Prepare Dressing


1. Combine mayonnaise, brown sugar and lemon juice in a small bowl.


2. Mix well and set aside to let flavors marinate while you prepare the vegetables.








3. Place covered in the fridge if you are preparing the dressing in advance.


Prepare Fruits and Vegetables


4. Wash and dry vegetables on paper towels, or spin dry in salad spinner.


5. Chop or finely shred the cabbage with sharp knife, or in food processor.


6. Clean and grate the carrot.


7. Remove seeds and finely chop red bell pepper.


8. Cut root end and tough tops off green onions. Finely chop the onions, including the dark green tops.


9. Core and chop the unpeeled red and green apples into very small pieces.


10. Combine cabbage, carrot, bell pepper, onions and apples in a large bowl.


11. Assemble the fruit and vegetables, then pour the dressing over the cole slaw and mix thoroughly.


12. Cover bowl and place apple cole slaw in the refrigerator for at least 15 minutes for the flavors to blend together
