Keep Homemade Fries Crispy

Fries can be cut with a potato slicer or with a paring knife.


You can find french fries in any diner or fast food restaurant, but they have a reputation as being a very unhealthy food. Making fries at home allows you to control the type and amount of oil and salt used on your fries, so you can enjoy your fries with fewer health concerns. There are different schools of thought as to achieve crispy fries at home, involving different techniques for frying, coating or removing moisture from the potatoes. Cooking fries at a high temperature creates a skin on the outside of the potato that prevents it from absorbing oil.


Instructions


1. Use a high-fat frying substance. Buy beef, pork and other animal fats from a butcher. Animal fats are able to maintain a high heat when frying. Use coconut oil for vegetarians or others who prefer not to eat animal fat. Heat the melted fat to 380 degrees. Cook small batches of fries in a single layer for a few minutes at a time. Watch the color of the fries, and remove the fries when they are golden, but not brown.


2. Precook the potatoes in water before frying them. Fill a large pot with water two inches from the top of the pot, and heat the pot over high heat until the water begins to boil. Add salt and mix thoroughly to dissolve it. Add a large handful of fries to the boiling water, and let them cook for three minutes. Dip the slotted spoon or strainer in the boiling water, and fish out all of the fries quickly. Dry the cooked fries on paper towels. Fry the completely dry fries in small batches in a deep fryer set to 350 degrees until they are golden.


3. Preheat the oven to roast at 400 degrees. Toss cut fries with olive oil in a large mixing bowl. Check that all fries have been coated completely with oil, otherwise they will burn in the oven. Line a baking sheet with aluminum foil and a thin layer of olive oil. Spread the fries in a single layer on the baking sheet. Roast the fries for 25 minutes, remove the pan from the oven, and flip the fries to the other side. Roast for another 25 minutes, until the fries are golden brown.
