Make Passover Pizza

If you want to please the kids during Passover, make them their own Passover pizza. With a matzo base and delicious toppings, this pizza appeals to adults as well as children. It's a welcome addition to Passover cooking. Though you can make a dough out of matzo meal and eggs, you can make pizza quicker using just matzo as the base. This recipe makes an individual-sized pizza.


Instructions








1. Preheat the oven to 350 degrees F.


2. Cover the matzo with a thin layer of marinara sauce. If you apply the sauce too thickly, the pizza becomes soggy.


3. Add seasonings if you want. Garlic powder, salt and fresh herbs like basil and oregano can liven up the flavor of your pizza.


4. Layer on some cheese, but not too much. The matzo crust can't handle too much moisture.


5. Pile on the toppings to your Passover pizza. Add whatever vegetables you like on pizza. Grilled onions and peppers, tomatoes and olives are classics. Check the refrigerator for any extra veggies you might want to add.


6. Bake your Passover pizza for 5 minutes on a baking sheet--just enough time to warm the vegetables and melt the cheese. Keep the pizza in a little longer if the cheese still isn't melted.
