Make Italian Rolled Turkey Breast

Because so many people turn up their noses at dark meat, you might want to try this all-white-meat turkey recipe. It's also a nice Thanksgiving dish with an Italian flavor. Serves 6 to 8.


Instructions


1. Preheat oven to 450 degrees F.


2. Make an "X" on the flat side of each chestnut with a sharp knife.








3. Place the chestnuts on a baking sheet, and roast 25 minutes. Remove, and let cool.


4. Reduce the oven temperature to 400 degrees F.


5. Crack the chestnuts open with a nutcracker. Remove chestnut meat.


6. Chop the chestnuts coarsely, and put them in a large bowl.


7. Heat 3 tbsp. olive oil in a skillet, and fry the bread crumbs until light brown.


8. Put the bread crumbs in the bowl with the chestnuts.


9. Add 1 tbsp. olive oil to the skillet, and saute the prosciutto until crisped.








10. Add prosciutto to the bread crumbs.


11. Add the parsley, garlic, Parmesan cheese, 1 1/2 tbsp. rosemary and 1 tbsp. olive oil to the bread crumb mixture, and set aside.


12. Remove the skin from the turkey breast, and butterfly it (keep a knife horizontal, and slice the breast lengthwise almost but not all the way through so the breast opens like a book).


13. Lay the breast flat, and rub with salt and pepper.


14. Spread most of the stuffing mixture over the turkey to within 1 inch of the edges.


15. Starting with a long edge, roll up the meat. Tie the roll with kitchen string in 3 or 4 places to secure it.


16. Heat 2 tbsp. olive oil in a skillet, and brown the turkey roll on all sides.


17.Put the turkey on a rack in a roasting pan, and sprinkle with salt, pepper, the remaning rosemary and the rest of the stuffing.


18. Add 1/2 c. of the wine to the roasting pan, and roast the turkey for 1 hour or until the breast is tender and a meat thermometer registers 175 to 180 degrees F. Baste the breast occasionally with juices from the roasting pan, and add wine to the pan as necessary.


19. Remove the turkey from the oven, and let rest 15 minutes.


20. Remove the strings from the roll, and cut turkey into 1/2-inch rounds.


21. Serve.
