A good oil and vinegar salad dressing takes a simple plate of salad greens to the next dimension of delightful. Read on for an easy take on oil and vinegar dressing. Remember that there's not one right way to make a dressing. It should simply taste good to you. Add this to my Recipe Box.

Instructions

1. Pour the olive oil into a small container, preferably a non-reactive one.

2. Pour in the balsamic vinegar.

3. Mix and test. If it's too vinegary, add more oil and vice versa.

4. Shake in the salt and garlic. Sea salt is preferred as it lends a sharper flavor. Garlic can be fresh pressed or simply a shake from your spice container. Test to see if it tastes good to you--that's the most important.

5. Grind the pepper. If you love pepper, add lots. If not, go easy, but don't avoid the pepper as it's a key finishing note to the dressing.

6. Whisk the ingredients together. Taste and adjust as necessary and toss over the herb salad mix.
