Make Mushroom And Rice Chicken

This is a great recipe that can be thrown together for a quick family dinner at the end of a busy day. It requires very few ingredients and little prep time, yet keeps them coming back for more every time.

Make Mushroom and Rice Chicken


1. Assemble the dish. Pre-heat the oven to 350 degrees, Fahrenheit. In the casserole dish, pour in the can of soup and an extra can full of water. Mix together with a fork to combine and work out the lumps. Add the rice and a pinch of salt and pepper. Stir through. Place the chicken breasts in the dish. They should be submerged in the mushroom and rice mixture a little over halfway.


2. Bake the casserole. Once the oven is up to temp, cover the casserole with aluminum foil and cook, covered, for an hour. After an hour, take the foil off and cook for an additional thirty minutes.


3. Serve the casserole. Let the mushroom and rice chicken casserole cool for five minutes, then serve alongside a mixed green salad or steamed broccoli. This recipe serves four people.
