Make Yucca Fries

Yucca fries


Yucca is also known as cassava and comes from the Euphorbeaceae plant primarily grown in south America, Asia and Africa. It is eaten in many different ways as it is very starchy can can replace potatoes in many different meals. It is a starchy vegetable and high in calcium, phosphorous and Vitamin C. It is also the main ingredient in tapioca. Here is an easy recipe for Yucca fries.


Instructions








1. Heat peanut oil to 350 degrees. You can use a cooking thermometer to gauge the heat.


2. Cut yucca into strips 1/3 inch thick and 3-4 inches long. Make sure to remove all peel and bark from the yucca. You can also purchase pre-cut yucca strips.


3. Add cut yucca to oil and fry until golden. Remove immediately and place on a paper towel covered plate to remove any excess oil. Sprinkle with cayenne, salt and pepper to taste. Yucca fries taste delicious on their own, but they also taste great with black bean dip or even thousand island dressing.
