Brew Soda Pop

You can buy your own, bring your own or brew your own soda pop. Create your own signature flavor or reproduce popular soda pop flavors by combining yeast, flavor extracts, sugar or honey, acid and water. Brewing a batch takes about an hour and the soda pop will be ready to drink in 24 hours.


Instructions








1. Boil 2 quarts plus 2 cups of water with 1/2 cup of light honey or 1/2 cup of sugar and 1 tbsp. of flavor extract for fifteen minutes in a stockpot. Stir to dissolve the sweetener and mix in the flavor extract.








2. Remove the pot from the heat and add 2 tbsp. of lemon juice. Allow mixture to cool for about half an hour. This forms your soda pop base.


3. Mix one package of champagne yeast with 1/4 cup of warm water and 1/2 tsp. of sugar to proof the yeast. The yeast mixture will carbonate the soda pop base in the next step.


4. Mix 1 1/2 tsp. of the yeast mixture into the cooled soda pop base. Immediately pour the soda pop into sanitized plastic bottles, using a plastic funnel. Don't completely fill the bottles. Leave about 1 inch of empty space at the top and cap with bottle tops.


5. Let the bottles sit at room temperature for about 12 hours. Squeeze the bottles to determine the amount of carbonation. When the plastic bottle feels rock hard, chill the soda pop in the refrigerator to stop the carbonation process.


6. Allow the soda pop to chill and brew overnight. Drink within seven days of brewing.
