Baked Chili Porcupine Meatballs & Sauce

Porcupine meatballs are a departure from traditional meatballs.


Meatballs come in a variety of styles, from traditional meatballs eaten with spaghetti to sweet and sour cocktail meatballs. Combining traditional meatballs with uncooked rice, results in spiky meatballs, known as porcupines. Porcupine meatballs make an easy meal for busy nights, as they require only about 20 minutes of preparation time. Experiment with different meat, spices and other add-ins for your own signature creation.


Instructions








1. Place tomato juice, chili powder, allspice, celery seed, Worcestershire sauce and brown sugar in a medium saucepan. Mix well and allow the mixture to simmer for 10 minutes.


2. Combine the beef, rice, onion, green pepper, celery, beaten egg, mustard, salt and pepper in a large mixing bowl. Mix ingredients together.


3. Measure the meat mixture with a cookie or ice cream scoop. Form the mixture into meatballs and place them in a single layer in the 9-by-13 inch baking dish.


4. Pour the chili sauce over the meatballs. Cover the baking dish tightly with aluminum foil and bake at 350 degrees for 60 minutes.
