Make A Healthy Coleslaw

Cole slaw is a cool, creamy and crunchy side dish served at many backyard barbecues and holiday gatherings. Although the slaw base of shredded cabbage is the same in most any recipe, there are endless variations you can make, from added ingredients to changes in the dressing. Start with the classic base and make the recipe your own by tailoring it to your family's preferences.


Instructions


1. Combine the green and red cabbage in a large bowl. Add two large shredded carrots and 1/2 cup of a combination of dark and gold raisins. Toss in 1/2 cup of julienned apples and 2 tbsp. of finely grated red onions. Choose golden delicious and gala apples or similar flavors for a light sweetness and a tart flavor from the apples. Combine all of the ingredients with a fork.


2. Pour 1 tsp. of lemon juice over 1/2 cup of light or low-fat mayonnaise in a small bowl. Add 1 tbsp. of sugar and 2 tbsp. of red wine vinegar. Whisk the dressing ingredients until everything is thoroughly combined.








3. Pour the dressing over the slaw mixture. Toss the slaw to coat everything evenly with the dressing. Cover the bowl with plastic wrap and place it in the refrigerator to chill through for two to three hours.
