Use Molds For Chocolate Pretzels

While the basic method of making chocolate pretzels is simply to dip them in melted chocolate, by using a candy mold you can create a crunchy confection with the same taste and texture, but in any shape and size you want. Making a molded chocolate pretzel is a relatively simple process which you can improve by taking care to give your pretzels and chocolate the right preparation for a perfect shape.

Instructions

1. Fill molds with water, then pour the water into a measuring cup. This will tell you how much chocolate to use later.

2. Break up the pretzels into small pieces. If you have trouble breaking the pretzels cleanly, use a cutting board and cleaver or butcher's knife to cut them. How small you cut the pieces is up to you, depending on what you want in your pretzels and the size of your molds; the smaller the pieces, the more pretzel you'll be able to fit into each mold, but larger pieces will have more crunch and taste more like regular chocolate-coated pretzels.

3. Rub the molds with melted butter. Use either a piece of clean, high-quality paper towel or a silicone brush. Thoroughly coat the inside of each mold. Make sure all of the plastic is greased.

4. Measure the chocolate chips into the microwaveable container. If using chocolate squares, grate the chocolate with a cheese grater in order to get the right measurement, and for ease of melting.

5. Microwave the chocolate on "high" for 30 seconds at a time. Stir after each cooking time with a wooden or metal spoon. Be careful: it will be quite hot. Continue until the chocolate is fully melted.

6. Coat the inside of each of the molds with a little chocolate. Use the silicone brush, if you have it, or pour chocolate in and swirl it around. Try to just cover the insides of the molds with a thin coat.

7. Place the molds in the refrigerator to harden. About 10 minutes.

8. Fill each mold with pretzel bits. Break down any pretzel pieces that stick out above the top of the mold; this will ensure that the bottoms of the molded pieces stay flat.

9. Fill the molds with melted chocolate. Refrigerate molds for one hour.

10. Turn the molds upside-down over a plate. Gently bend and tap the molds to release the chocolate pretzels.
