Make Beer Butt Chicken

There are many recipes for Beer Butt Chicken, or Beer Can Chicken as it is sometimes known. How you make it depends on your taste. Beer Butt Chicken can be made on a gas grill or a charcoal grill, or even over an open fire.


Instructions


Get the Chicken Ready


1. Open a can of beer. Drink about a third of the beer. Set the beer aside. You will need the rest for the recipe.


2. Remove the chicken from the wrapping. If it comes with the gizzards, remove the gizzards. Set those aside to make gravy. If you do not want to make gravy (really, this recipe does not need a gravy, it is good just as it is) discard the gizzards or feed them to your dog. He will love gizzards as treats and will do anything for them. Rinse the chicken.


3. Put 1 tsp. of each of the spices in the beer can. Sprinkle 1 tsp. of each of the spices inside the chicken and rub all over the inside. If you need more, you can add more. Sprinkle 1 tsp. of each of the spices on the outside of the chicken, except for the salt. For the salt, you need just a light dusting.


Prepare Grill and Cook the Chicken


4. Get your grill started. If you are using charcoal or wood, wait until the charcoal or the wood fire dies down and you have a hot bed of embers. You will need to keep the heat on one side of the grill. If you are using gas, only turn one side on. If you are using charcoal or wood, keep the hot embers to one side of the grill.


5. Lay a piece of foil on the grill opposite the side with the heat. Foil will keep the grease from running into the coals and prevent flare ups. Turn the sides of the foil up to form a very wide bowl.


6. Bring the chicken and beer out to the grill. Put the beer can into the wide end of the chicken. Stand the chicken up on the beer can, using its legs to form a tripod. Close the top of the grill.


7. Cook for approximately 3 hours. Use a meat thermometer to check for doneness. Chicken should be cooked to 185 degrees F.








8. Pull the beer can out of the chicken. Put the chicken on a serving platter. Carve and serve with potato salad.
