Gluten Free Halloween Recipes

Halloween can be a tricky time for those suffering from Celiac's disease or another gluten intolerance. Although Halloween candy isn't the healthiest thing you can consume, by making your own treats you're insuring exactly what goes into your body and may even have some DIY fun along the way.

Yummy Baked Fall Apples

Ingredients:

4 medium-sized apples, cored

4 strips lemon rind

1/2 cup currants, dried

4 whole cinnamon sticks

1 vanilla bean, cut into 4 pieces

1/4 cup fresh lemon juice

Directions:

1. Put all four apples into a large, oven-ready container with lid.

2. Inside each apple insert currants, lemon rind, cinnamon and vanilla bean.

3. Pour lemon juice inside and over the apples.

4. Cover and bake at 350 degrees for about an hour or until apples are fork tender.

Chocolate Cookie Disks

1/4 cup potato flour

1/2 cup raw white sugar

3/8 cup butter or margarine

One large whole egg

Directions:

1. Mix dry ingredients together and reserve.

2. Mix beaten egg and whisk in butter. Add mixture a little at a time to your dry ingredients and beat until smooth.

3. Using hands, roll dough into balls approximately one inch in side and place on greased cookie sheet.

4. Flatten the spheres using a greased fork. Slightly criss-cross tinge-marks if desired.

5. Preheat the oven at 350 degrees. Bake for 10 minutes. Let cool and serve.
