Make A Spicy Vegetarian Pasta Bolognese

This recipe is fun, versatile and quick to make.


For all the vegetarians out there, you'll love this one, and for everyone else, this is a great alternative to meat and pre-packaged foods.

Preparation Time: Less than 30 minutes


Serves: 4


Instructions


1. Place 2 litres of water in a large pan and begin to boil.


2. Heat 1 tbsp of olive oil in a large frying pan and add the chopped onions and pre-soaked soya mince and cook on a medium heat for 5 minutes.


3. Add the spices, vegetables, 200g of chopped tomatoes and garlic to the pan and cook on low heat for 20 minutes or until the excess water has evaporated.


4. Add the uncooked pasta spirals to the pan of boiling water along with 1 tbsp of olive oil and cook according to packet instructions.


5. Add the remaining chopped tomatoes to the soya mixture; stir well and heat gently for 2-3 minutes.








6. Once the pasta is cooked, drain it serve on a plate and add the desired amount of soya mixture onto the top of the pasta.
