Make Spicy Baked Homefries On A Pizza Stone

Crispy home fries are not just for breakfast anymore, and they don't have to be fried. Adding a variety of spices to them besides salt and pepper makes this an ideal complementary starch for chicken, pork and beef. It goes well with any grilled meats, but the cooking time and temperature is such that it can easily be coordinated with a small roast beef, baked chicken or pork loin. It's also a hearty enough dish to be served along with sandwiches or soup for a quick, easy meal.








Instructions


1. Microwave the potatoes for 5 minutes. Preheat the oven to 400 degrees. Cut the potatoes into fourths, or smaller pieces if desired, leaving the skin on.


2. Spread the potatoes on the pizza stone tightly, leaving little or no gaps between each piece.


Generously sprinkle salt, pepper, parmesan cheese, chili powder, garlic salt, basil and parsley.


Drizzle olive oil on top of the spices.


3. Heat at 400 degrees for 1 hour.


Remove from oven, garnish with sliced peppers, carrots and tomatoes.
