Glaze Carrots

Adding glaze to carrots livens up a common side dish.


A simple glaze adds a touch of sweetness to a side dish of carrots and provides a smidgen of fanciness to an otherwise commonly plated food. Preparing a glaze doesn't involve a huge amount of preparation and is easily tailored to the individual preferences of the cook. A standard carrot glaze accommodates four 4-oz servings, or about six medium carrots.


Instructions


1. Melt the butter in a small saucepan over low heat. Mind the pan so that the butter doesn't burn.








2. Whisk the brown sugar into the melted butter until the sugar is completely dissolved. Substitute other types of sweeteners such as orange juice, agave nectar or honey in equal measure. Continue cooking on the lowest heat for about one minute. Sugars can burn quickly if not watched, so keep an eye on the stove.


3. Turn off the heat and stir in additional seasonings such as fresh parsley, tarragon or mint. 1 tsp. of minced ginger root or orange zest also combines well with cooked carrots.








4. Pour the glaze over a bowl of cooked carrots and mix to coat thoroughly. Serve immediately.
