Make Three Bean Salad

Three bean salads are a nice addition to just about any type of casual lunch or dinner. The salad also works as a simple food to take along on picnics and similar outings. Requiring only a little prep time, the three bean salad can be prepared in advance and enjoyed even a day or two later.


Instructions


1. Prepare the beans. Dried beans may be used if they are cooked in advance. If the beans are canned, rinse and drain the contents thoroughly. Place the beans in a large mixing bowl.


2. Chop the celery and onion. If standard size cans of beans were used, two stalks of celery and one medium sized onion will be sufficient. The celery and onion may be chopped fine or coarse, according to personal taste. Add the celery and onion to the beans.


3. Mix the dressing for the salad. In a separate bowl, combine the sugar, vinegar, olive oil, and salt and pepper to taste. With the use of standard size cans of bean, a third cup each of sugar and vinegar will be sufficient, along with a fourth cup of olive oil. Add salt and pepper as desired.








4. Pour the dressing over the beans, celery, and onion. Toss gently to allow the dressing to evenly coat all the ingredients. Cover and chill the salad for several hours, as this will allow the flavors of all the ingredients to mingle.
