Make A Fresh Apple Cake

A mixture of fresh apples, nuts and spices make this apple cake a family favorite. Best of all it's made in a bundt pan and sprinkled with powdered sugar. No frosting! Follow this recipe to make this treat. .

Instructions

1. Sift 3 cups flour into large bowl.

2. Blend 1 tsp. baking soda, 1/2 tsp. salt, 2 tsp. cinnamon and 2 cups sugar to the flour, mixing well.

3. Set flour mixture aside.

4. Whisk two eggs and 1 1/2 cups oil in large bowl.

5. Mix in 2 tsp. vanilla.

6. Add dry ingredients to egg mixture slowly until well blended. Mix with a spoon. Do not use an electric mixer.

7. Peel 2 or 3 sweet apples and chop into small pieces to yield 3 cups.

8. Mix 2 cups chopped pecans and 3 cups chopped apples into cake batter.

9. Spray bundt pan lightly with cooking spray. A little extra spray in the bottom of the pan will help the cake come out of the pan after it cools.

10. Spoon batter into greased bundt pan and bake in preheated oven at 350 degrees for 1 hour or until dark golden brown.

11. Cool cake before removing from bundt pan. To remove cake from bundt pan, run a knife around the edges of the cake to loosen from the sides of the pan. Place a plate or cake platter over the top of the bundt pan and invert cake.

12. Dust cake with powdered sugar after it cools completely. The powdered sugar gives the cake a little extra sweet kick and looks beautiful against the dark golden brown cake.
