Make Almond Brandy Truffles

Truffles are delectable candies made with a sweet filling that is shaped by hand, dipped in chocolate and covered in cocoa powder or ground nuts. The cocoa powder looks somewhat like dirt, and this is why the delicious candies are named after the exotic mushroom of the same name. Irresistible almond brandy truffles are easy to make in your own kitchen.


Instructions


1. Bring the heavy cream or whipping cream to a boil in a small saucepan over medium-low heat. Remove the saucepan from the burner and stir in the unsweetened baking chocolate until it's completely melted.


2. Mix the warm chocolate mixture in a mixing bowl with the powdered sugar, brandy and almond paste.


3. Spread the mixture in an 8-by-8-inch glass baking dish and refrigerate covered for about an hour until it's firm enough to shape into balls.


4. Using your clean hands, a small spoon or a melon baller, shape the chocolate mixture into 1-inch truffles.








5. Put the ground almonds in a shallow pie pan and roll the truffles in the mixture until they're coated.


6. Cover a cookie sheet with parchment paper or waxed paper, place the finished truffles on the paper and refrigerate them until they're firm.


7. Store the almond brandy truffles in a zip-lock bag or a sealed container and refrigerate.
