Some desserts are just for the holiday, but this one is just too good to have only twice a year. This recipe uses a lot less fat than the traditional southern recipe. This sweet potato pie recipe makes 2 pies.
Instructions
1. Boil the sweet potatoes. This is the longest part of the preparation, because it should be done slowly. You will know they are done when the potatoes can be pierced easily with a fork. You can cook them to the point where you can peel them with a butter knife; It will not destroy the flavor.
2. Let them cool for approximately 20 minutes.
3. Peel the potatoes and cut into cubes or slice in a separate bowl.
4. Smash with a potato masher in a large bowl.
5. Mix ingredients: In the bowl start the mixing the potatoes with your hand-mixer. Add in eggs, mix thorougly. Add the other ingredients except the milk and topping. Once thoroughly mixed, slowly add milk to desired texture.
6. Lightly dust the crusts with flour to avoid sticking.
7. Pour into pie crusts. Be sure not to overfill the shells.
8. Cook 35 to 45 minutes at 350 depending on your oven. Put on the middle shelf. It is done when you stick a toothpick in the center and it comes out clean.
9. Take out and allow to cool on a rack for as least 30 minutes.
10. Serve: Cut the pie into 8. Top with ice cream, whipped cream, or serve alone.
