Spinach dip is a party favorite for many people and many restaurants even serve it as an appetizer. You can serve spinach dip with warm bread, crackers or even fresh vegetables. With this simple recipe, you can make spinach dip in the comfort of your own home.
Instructions
1. Prepare the spinach. Allow the frozen spinach to defrost. This usually takes between 30 to 45 minutes. Once it is defrosted, press it in order to get all of the excess water out of it. Using a strainer and a paper towel, press the spinach. Try to get squeeze as much of the water out of the spinach as possible. Set the spinach aside.
2. Chop everything up. Mince the garlic. If you have a garlic press, this will take no time at all. Set it aside, then chop up the onion. How fine you chop up the onion is completely up to you. If you prefer a chunkier spinach dip, chop it into chunkier pieces. If you prefer a smoother spinach dip, mince the onion.
3. Mix the wet ingredients. In a microwave safe bowl, mix the 8 ounces of sour cream, garlic, spinach and 8 ounces of cream cheese. Stir everything together until it is an even consistency.
4. Add the dry ingredients. Now, it’s time to add the dry ingredients. You want to add them one at a time in order to get an even mixture. Add the salt and then add the pepper. Slowly stir in the shredded cheddar cheese. Once the cheddar has been added, slowly stir in the Monterey Jack cheese.
5. Heat it all up. Once you have all of the ingredients mixed up, it’s time to heat things up. It might take a few tries to come up with the consistency that you desire. Microwave the mixture on medium-high for approximately 2 minutes. Once the time is up, take the mixture out and stir it up. If it isn’t the consistency that you want, heat it up in the microwave for another 30 seconds. Continue to heat it up at 30 second intervals until you reach the desired consistency you want. Serve it with your favorite bread, crackers or fresh vegetables.
