Make Cranberry Conserve

Make a tart, antioxidant-rich cranberry conserve.


This conserve recipe provides a combination of tart and sweet tastes and can be prepared the night before any event. This recipe uses the tastes and health benefits of several fruits including the antioxidant rich cranberry and a spice kick from allspice and cinnamon. This recipe serves approximately six one cup servings and will have your guests coming back for seconds.


Instructions


1. Soak the dried apricots in orange juice for one hour. Drain the apricots after soaking.


2. Chop the pear and dried apricots on a cutting board using the sharp knife.


3. Combine water in a large sauce pan with sugar, cinnamon stick, cranberries, apricots and allspice. Simmer on the stove top at medium heat until the cranberries have popped out of their skins. This takes approximately 20 minutes.


4. Add the diced pears and remove the cinnamon stick.








5. Stir and simmer on low heat for five minutes.


6. Refrigerate or serve immediately.
