Use An Olympia Pasta Maker

Nutritionists agree that pasta, if prepared with a good low-fat sauce and plenty of vegetables is a healthy and nutritious meal. Pasta is also delicious and is even more so when the pasta is homemade. The flavor, taste and texture of homemade pasta defies comparison to the store-bought brands, no matter what kind of gourmet brand it is. After finding a good pasta recipe, the cook will next need advice in using a quality pasta maker. The Olympia Pasta Maker is an old model but considered one of the best ever made.

Instructions

Making the Pasta Noodles

1. Clamp the Olympia pasta machine to the table or counter. Put the dial on the setting that allows the machine to roll the dough at the widest possible width.

2. Take the kneaded dough and divide it into four sections. While working with the first piece, cover the other three pieces with a towel.

3. Using your hands, flatten the first piece as much as possible and shape it into a rectangular shape. Feed it through the Olympia pasta maker machine's rollers.

4. When the dough comes out the other side, fold it into three by folding Side A half way over and folding Side B to cover Side A. Feed this through the machine.

5. Fold the dough again and feed it through again. Do this five times, and then start rolling it thinner by turning the setting to its narrowest point on the dial. Do not fold the dough anymore.

6. Keep doing this until the dough is folded as thin as possible. The dough can be halved and then the two halves can be worked one after the other.

7. When the dough is as thin as desired, set the noodle-cutting attachment on the desired noodle width and feed the dough through the machine to cut the noodles.

8. As the dough comes through the machine, catch the cut noodles as they come out on the other side.

9. Place the noodles to dry on a sheet with corn meal. Do not let them touch each other (to prevent sticking).

10. Repeat this procedure with the other three pieces of dough.

11. Let the noodles dry for half an hour. Boil the noodles for three minutes to cook, and add desired sauce.
