Make Peach Jelly For Freezing

Peaches should be completely ripe.


If you have a large supply of peaches, the perfect use for them is to make peach jelly. By freezing the jelly in small jars, you can easily thaw just enough to consume over the next few weeks, or to give to someone as a delicious gift. If you enjoy making jelly, substitute peaches for a variety of other fruits to experiment with different flavors.


Instructions


1. Check that peaches are fully ripe. Peel and pit 3 pounds of peaches. This will make enough jelly to fill nine half-pint jars.








2. Puree the peaches in a blender.


3. Add 2 tablespoons of lemon juice.


4. Transfer blended fruit (which should equal 4 cups) to a large 8-quart saucepan. Add a box of powdered fruit pectin and mix well.


5. Place the saucepan on high heat and stir until it boils. Add 5 1/2 cups of sugar immediately and bring it back to a full boil. Stir constantly for one minute.


6. Remove the pan from the heat and set it aside for a few minutes. Skim the foam off the top with a metal spoon.


7. Pour into jars, filling each one to about 1/2 inch from the top. Clean the sealing edge with a damp towel and tighten the lids.


8. Place the jars carefully inside your freezer, where they may be stored for up to one year.
