Ultimate Caesar Salad

Spend an extra few minutes to make the ultimate Caesar salad.

Traditional Caesar salads, with their leafy romaine and signature dressing, rank as one of the most popular types of salad. By handcrafting croutons and dressing, you can make a Caesar salad exit the realm of ordinary and become ultimate.

Croutons

Cut a roll of ciabatta bread into cubes, place them on an oven tray and drizzle them with olive oil. Bake the cubes in an oven for four or five minutes until golden.

Dressing

In a bowl, combine 1/4-cup vegetable or olive oil, 3 tbsp. of mayonnaise, 2 tbsp. of grated Parmesan cheese, 1 tbsp. of white wine vinegar, 2 tsp. each of Dijon mustard and anchovy paste, 1/2 tsp. each of salt, pepper and Worcestershire sauce and two chopped cloves of garlic. Combine until smooth.

Combine

In a bowl, place one chopped head of romaine lettuce and toss the lettuce with the dressing. Top with croutons and Parmesan cheese. If desired, add bits of cooked bacon.
