Make Jello Cheesecake

Take the fuss out of an elaborate cheesecake dessert by making a no-bake variety that is quick, easy and delicious, and is healthier than the high fat version. Another advantage of a Jell-O cheesecake over the traditional version is that you don't need to use the oven, so this is a great dessert for a young cook. With just 20 minutes of preparation time, you will have a creamy, rich-tasting dessert that will have your guests asking for more.








Instructions


Make Jell-O Cheesecake


1. Crush the vanilla wafers into fine crumbs; either place them in a large storage bag and use a rolling pin to pulverize them or use a food processor. Stir 4 oz. of melted butter or margarine into the crumbs.


2. Press the vanilla wafer crumb mixture into the bottom of a 9-inch spring form pan and place in refrigerator to cool and become solid. The harder you press the crumbs into the pan, the firmer the crust will be.








3. Dissolve one package of strawberry Jell-O in 1 cup boiling water. Set aside to cool.


4. Mix softened cream cheese, yogurt and Jell-O solution together and stir until fluffy.


5. Pour the filling into the spring form pan and spread it evenly over all the vanilla wafer crust. Place in refrigerator and allow it to cool until firm, about 90 minutes.


6. Remove the ring from the spring form pan, slide the cheesecake (still resting on the bottom of the pan) onto a serving tray. Slice and top each piece with fresh or frozen strawberries.
