Keep Spices Fresh

Keeping dried spices fresh can be difficult for the everyday cook. It seems like these expensive recipe additions almost always grow stale before they can be used. Keeping spices in airtight containers away from heat and moisture is key to maintaining their freshness. This storage method allows most spices to remain fresh for about a year.

Instructions

1. Pour each container of spices into an individual plastic container with a lid. Small containers marketed as salad dressing or condiment holders are excellent for this.

2. Write the name of each spice and the date on a piece of masking tape and stick the tape to the lid of each corresponding container.

3. Place the sealed containers in a large, plastic container with a lid or a gallon-sized, zip-top freezer bag. If using the bag, make sure the bag is on its side and all sealed containers are inserted so that they stand up.

4. Seal the bag or container. Clear off a shelf in the freezer and place the bag or container flat on the shelf.
