Thicken Broccoli Soup

Thickening broccoli soup is a means of adding texture to it.


Perfect for a dark and stormy evening to warm up a family, soups are a common meal that is shared around the world. Soups are found in almost any cuisine. They range from watery to thick and from vegetable based to cream based. When it comes to broccoli soup, a watery, pureed mixture is not appealing to most palettes. However, if thickened, broccoli soup can have an enjoyable, creamy taste and texture.


Instructions


1. Pour the soup into the large pot and place the pot on the stove.


2. Turn the burner to medium-high heat. Bring the soup to a low simmer.








3. Pour a small amount of cornstarch into the small bowl. Add stock and the cornstarch to the bowl in a two-to-one ratio. For example, for 1 tbsp. of cornstarch, use 2 tbsp. of stock.


4. Whisk the cornstarch and stock together thoroughly in the small bowl until there are no lumps left.


5. Add 1 tbsp. of the slurry, the cornstarch and stock mixture, to the simmering soup at a time. Whisk the slurry into the soup thoroughly.


6. Pour in more cornstarch slurry as needed, adding a little at a time, until the desired thickness is achieved.
