Make Stuffed Zucchini Flowers


Stuffed zucchini flowers are a rare Italian delicacy that can only be enjoyed during certain times of the year. Grow the zucchini yourself, or look for the vegtable at your local farmers' market, where the golden blossoms are sold attached to the zucchini. The flowers are quite perishable and must be used before they wilt. Follow this recipe for a great way to prepare zucchini flowers.


Instructions


1. Prepare the flowers by carefully removing the pistils and the stems. Rinse gently under cold water and pat dry. The flowers are very delicate, so take care not to break them.


2. Make the batter. Mix the flour and one egg, then add milk until the mixture reaches a thick batter consistency. Season with one teaspoon each of salt and pepper.


3. Prepare the filling. Mix the cheeses, egg, herbs, garlic, salt and pepper. Place the filling in a pastry bag and pipe into the zucchini flowers, being careful not to break them.








4. Heat oil in a deep fryer to 375 degrees. Dredge the stuffed flowers in the batter and gently add to the oil. Fry until crispy and golden brown. Remove and drain on paper towels to absorb any excess oil.
