Make Jelly Roll Cake

A jelly roll cake is simply a flat square or rectangular cake spread with filling and rolled into a log. It looks complicated to make, but it's really quite easy and it tastes great.


Instructions


1. Preheat your oven to 375 degrees F (190 degrees C).








2. Line a 15-by-10 inch jelly roll pan with aluminum foil then grease well with butter.


3. Beat 3 eggs until thick, then beat in the granulated sugar gradually.


4. Add the water and vanilla and beat on a low speed.


5. Add the salt, baking powder and flour and beat until the mixture is smooth.


6. Pour into the jelly roll tin and smooth the mixture out flat.


7. Bake for 12 to 15 minutes.


8. Sprinkle powdered sugar over a clean towel. The towel should be slightly larger than the cake.


9. Loosen the cake from the pan and turn it onto the towel.


10. Trim off rough edges.


11. Carefully roll up the cake and towel and leave it to cool.


12. Beat the jelly with a fork until it is soft.


13. Unroll the cake and set the towel aside.


14. Spread the jelly over the cake.


15. Roll up the cake then sprinkle with more powdered sugar.
