Fry Batter Dipped Fish

Many people love fried, batter-dipped fish. You can easily create a batter and customize it with beer or your choice of spices and herbs. Choose a firm fish that can hold up well in the hot oil. Serve with cole slaw and french fries for the perfect comfort-food supper.


Instructions


1. Talk to the fishmonger and purchase boneless fish filets that are well suited to frying. Rinse the fish and pat dry with paper towels.


2. Assemble the ingredients to make a batter for the fish. Mix flour, eggs, milk, salt, pepper and a dollop of oil for the basic batter. Add spices like chili powder or dill. Create a very thick batter and add beer to it. The finished batter should be smooth, thick and sticky so that it adheres well to the fish.








3. Heat oil in a pan to 350 degrees F or use a deep fryer pre-heated to 350 degree F. Take care working with the hot oil.


4. Dip a piece of fish into the batter and coat it well on all sides. Use tongs to move the fish through the batter immediately.


5. Ease the batter fish filet into the hot oil with the tongs. Batter a second piece of fish and add it to the fryer, once the oil has come back up to temperature.


6. Fry the fish 2 to 3 minutes until it is golden brown with a crispy exterior. Test to make sure the fish is flaky, moist and cooked through.


7. Continue cooking the battered filets. Drain the fish on paper towels after removing from the cooking oil.
