Knowing what wines to pair with your meal can be a challenge and pairing the right wine with sardines is no exception. What type of sardines you plan to serve and how you plan to prepare them can effect the choice of wine, so keep this in mind when making your selection.
Grilled Sardines
Grilled Sardines tend to mix well with a Sherry Fino. Sherry is a complex fortified wine made from the Palomino Fino grape. Sherry often mixes well with salty and sublime flavors. It also complements seafood. Sherry is often served with other salty foods such as olives, nuts, ham, caviar, sushi, hard cheeses and shellfish.

Sicilian-Style Pasta with Sardines
Sicilian-style pasta with sardines pairs with several types of wine allowing you a bit more freedom when making your selection. American Riesling complements this dish nicely. Riesling is made from a white grape and is usually a sweet wine but at times can be dry. Usually California Rieslings are dry wines. This type of wine goes with oriental dishes, seafood and chocolate.

Lastly, Verdicchio pairs well with this type of meal. It is also an Italian white wine. It also pairs well with garlic, oil, risotto, and fish.
Pan-Fried Sardines With Tomato
For this type of sardine preparation you should search for a Pinot grigio. Pinot grigio is made from a white mutation of the red pinot noir grape. This wine often pairs nicely with dishes that have a white sauce, eggplant, or spices. It also goes well with light meals and is best when served near 48 degrees Fahrenheit.
