Instructions

2. Measure the fruit size as the maturity period draws closer. Ripe green zebra tomatoes usually are about 3 inches round.
3. Squeeze the tomatoes very gently to test for resistance. Like regular tomatoes, hard green zebras are not ripe. Ripe green zebras give slightly under pressure from your fingers. Test several tomatoes to get a comparison for the degree of give.
4. Look at the tomato's color. It should be golden yellow with contrasting green stripes, rather than predominately green.
