Grind Deer Meat

Use the meat from your deer hunting bag to make ground deer meat.


Put your prized catch from deer-hunting season to good use. By grinding your own deer meat, you can stock your freezer with a good protein source that can replace lean ground beef in any recipe. Home-ground deer meat can become deer burgers or, with the addition of spices and curing, deer sausage. By grinding your meat at home, you will also have more control over which cuts to grind to produce leaner or juicier ground venison.


Instructions


1. Trim all visible fat from the deer meat to prevent any off flavors from developing..








2. Cut the deer meat into 1-inch cubes.


3. Chill the meat in the refrigerator overnight. Never grind meat at room temperature or warmer.


4. Fit your grinder with a 3/8-inch grinder for larger bits of ground deer. Use a 3/16-inch blade for a finer grind.


5. Follow your meat grinder's instructions for the amount of meat to put into the top of the grinder.


6. Pass all the deer meat through the grinder.


7. Shape the deer meat into patties with your hands if using for burgers. Shape into one-pound loaves for other uses.


8. Wrap the deer meat tightly in freezer paper. Package in resealable freezer bags as an additional barrier to freezer odors. Use the ground deer meat within four months.
