Homemade Citrus Pectin

Make your own citrus pectin.


Pectin is used as a jelling agent when added to other ingredients in cooking. Citrus pectin is one of the most versatile kinds of pectin, often used to make marmalade and other kinds of jam. The procedure for homemade citrus pectin is simple, and makes use of the parts of citrus fruit that are often wasted.


Instructions


1. Shave off 1/2 lb. of the white side of citrus peel with a grater. Use any kind of citrus peel, including grapefruit, lemon, lime or orange.


2. Place the white sides of the peel in a blender along with 5 tbsp. of lemon juice. Blend until smooth. Pour the blend into a pot. Add 1/2 L of water to the pot and place the pot on the stove, turning the heat on high.








3. Mix the citrus blend with the water and wait for the mixture to come to a boil. Put the lid on the pot and lower the heat until the solution comes to a slow boil. Let it boil slowly for 10 minutes. Leave the top on the pot and let the citrus mixture cool.


4. Stretch the jelly bag over a large bowl so that it acts as a net over the bowl. Place the citrus solution over the jelly bag and press the solution on the bag to squeeze out the remaining juice. Squeeze until all the juice has been removed. The remaining material in the bag is the citrus pectin.
