Roast Poblanos

This tasty little heart-shaped pepper can be stuffed with rice, tomatoes and ground beef.


Roast up fresh, green poblano chili peppers for sauces such as mole, soups or for a flavorful meal. A fairly mild, heart-shaped pepper, the poblano has a delicious flavor when simply roasted. Pickle roasted peppers for sandwich toppings or chop for fresh salsa, or even can them for later use. No matter how you choose to use them, you will enhance a meal with these delicious peppers.








Instructions


1. Preheat oven to 400 degrees F.


2. Gather and rinse your poblano peppers in warm water. Dry them completely with a paper towel.


3. Rub each poblano pepper with olive oil. Place in a single layer, on a roasting pan and place in the oven. Bake for 15 minutes or until the skin blisters with black or dark spots.








4. Remove peppers and set aside to cool. Peel away the skin and remove the seeds using a sharp julienne or paring knife. Repeat for each pepper, then stuff or slice for your favorite recipe.
