Surround A Chicken Mixture With Mashed Potatoes

Mashed potatoes complement chicken dishes.


Surrounding a chicken mixture with mashed potatoes provides more flavor and texture to a dish. Chicken-based entrees that implement gravy and vegetables blend with mashed potatoes for a complete meal. Add a chicken mixture with gravy and biscuits to the center of a bowl as the featured part of lunch or dinner. Encircle the chicken and biscuits with a side of mashed potatoes to enhance the presentation of the dish. Serve your plated chicken, biscuits and mashed potatoes as comfort food.


Instructions


1. Preheat your oven to 425 degrees Fahrenheit. Bake homemade or pre-made biscuits on a baking sheet, according to recipe cooking times.


2. Peel six Yukon gold potatoes with a paring knife. Cut the potatoes into cubes. Put the potatoes in a tall pot of water and bring the water to a boil. Lower the heat to medium for 20 minutes.


3. Chop one onion, one carrot stick and one celery stick into small, thin pieces. Pull 3 cups of cooked chicken off a rotisserie chicken.


4. Heat three tbsp. unsalted butter in a large skillet on medium heat. Add the chopped vegetables and saut for 8 to 10 minutes until the vegetables soften. Add 1 tsp. of flour to the mixture and stir it in with the vegetables to thicken the gravy.


5. Pour 1 3/4 cups chicken broth into the skillet. Add ½ tsp. thyme. Bring the mixture to a boil for 2 minutes. Pour ½ cup half-and-half into the skillet. Add 3 cups of the rotisserie-cooked chicken.


6. Reduce the heat to low and allow the chicken mixture to simmer for about 3 minutes. Take the biscuits out of the oven.








7. Heat ½ cup milk for 1 minute. Drain the potatoes in a colander and allow them to cool for 1 minute. Transfer the potatoes to a mixing bowl. Add ¼ cup butter. Stir the butter into the potatoes. Pour the milk into the mixing bowl. Mash the potatoes with a manual potato masher or electric mixer until lumps disappear.


8. Cut the biscuits open and place two to three in a bowl. Use a ladle to scoop the chicken mixture out of the skillet. Pour the chicken mixture over the bottom halves of the biscuits. Place the tops of the biscuits over the mixture.


9. Scoop mashed potatoes from the mixing bowl with a spoon. Place the mashed potatoes around the bottom and sides of the bowl, so that they touch the biscuits.
