Different Cheese Knives

Use different cheese knives for different cheeses.

Cheese comes in all different textures, so having different knives for different cheeses is essential for a cheese lover. There are three basic cheese knives: the universal, the Parmesan knife and the planer. Care for your cheese knives as you would any other knife by hand-washing and storing them in their plastic covers or on a magnetic strip.

Universal

The universal cheese knife has a serrated edge that makes it easy to slice through most types of cheese. It has a pointed tip, allowing you to spear your cheese to put it on your plate. Most universal cheese knives will have holes in the blade to prevent soft cheeses such as Brie or Camembert from sticking to the blade. Many will also have a curved blade tip.

Parmesan Knife

Parmesan knives have a leaf-shaped blade made to break hard cheeses like Parmesan or Peccorino into small chunks. To use a Parmesan knife, insert the blade into the cheese and twist, breaking the cheese up naturally.

Cheese Planer

The cheese planer is ideal for shaving thin slices of firm cheeses. It has an angled edge, which guides the cheese through a thin slot. This is a great tool for getting thin slices of cheese for melting or garnishing a salad. It can also be used to thinly shave hard, crumbly cheeses that do not slice easily.
