Instructions

1. Preheat the oven to 350 degrees. Beat together the butter and brown sugar until fluffy. Add 1 egg and beat well. Slowly add 1 1/4 cups flour. Divide the dough in half. Cover and refrigerate one section.

2. Press 1/2 section of dough into the bottom only of a 10-inch springform pan (sides should be removed). Place the pan bottom on a cookie sheet and bake for 10 minutes. Allow to cool. Attach the sides of the pan to the bottom. Press chilled dough onto the sides of the pan about 2 inches up from the bottom. Set aside. Increase the oven temperature to 450 degrees.

3. Combine cream cheese and 1 1/4 cups sugar in a bowl and beat until fluffy. Add in 1/4 cup flour, remaining eggs and 1 tbsp. vanilla and beat until smooth. Stir in 1/2 cup of the sour cream. Pour into the prepared crust. Place on a cookie sheet and bake for 10 minutes.

4. Reduce the oven temperature to 300 degrees and continue baking the cheesecake until the center appears nearly set when the pan is shaken. Remove it from the oven and allow it to cool slightly. Combine the remaining sour cream, 1/4 cup sugar and 1 tsp. of vanilla in small bowl. Spread over the cheesecake. Place it in the oven and bake for an additional 15 minutes.

5. Cool on a wire rack for 15 minutes before loosening the crust. Allow to cool another 30 minutes, then remove the pan sides. Cover and chill for at least four hours. Let the cake stand at room temperature for 15 minutes before serving.
