Make a Ham & Cheese Omelette for Kids


Poor nutrition will negatively affect not only kids' health but also their behavior, school performance and overall development. The USDA Food & Nutrition Service recommends serving more whole grains, fruits and vegetables - and less sugar, fats and sodium. You can brighten up a healthy breakfast with ham and cheese omelettes made especially for kids.


Instructions








1. Whisk the eggs in the mixing bowl with 1/4 cup water until just blended. Set oven to 350 degrees Fahrenheit.


2. Spray the muffin pan with spray, thoroughly coating the sides and bottoms of each muffin cup. A pan with 6 large cups will work best, but one with 12 smaller cups also will suffice.


3. Divide the diced ham evenly among the muffin cups. Sprinkle the grated cheese on top; any kind of cheese will work, but most kids prefer a mild cheddar or jack.


4. Pour the eggs carefully over the ham and cheese, dividing them evenly among the muffin cups. Fill each cup about 3/4 full.


5. Bake the mini-omelettes for about 10 minutes. Check to monitor their progress; baking time will vary depending on the size of the eggs and the muffin cups.


6. Remove the pan from the oven when the mini-omelettes are puffed and slightly golden on top. Serve immediately, accompanied by fresh fruit and toast or a muffin. You could also serve the mini-omelettes on top of a pancake or waffle.
